Brunch Pie

Brunch Pie is an impressive dinner. Made with 2 cans corned beef hash, 2 (16 oz.) cans veg-all mixed vegetables, drained, 3 tbsp. margarine, 6 eggs and 2 c. shredded swiss or mozzarella cheese, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

👨‍🍳 Instructions

Grease 9 x 13-inch pan with margarine.

Combine hash with one beaten egg and press into pan.

Bake at 375° for 10 minutes. Saute onion in margarine. Layer cheese, onion and vegetables in the crust.

Beat together remaining ingredients.

Pour over cheese and vegetables.

Bake at 350° for 30 to 40 minutes until filling is set and golden.

Remove from oven; let stand 10 minutes before serving.
