Brunch Eggs
Brunch Eggs is an moderately easy dinner. Made with 12 to 16 slices white or wheat bread, swiss cheese, ham, 8 eggs and 3 c. milk, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Cut the crusts off of the bread.
Cover the bottom of a Pam-sprayed 9 x 13-inch pan with 1 layer.
Add layers of Swiss cheese and ham.
Cover with rest of bread.
Mix together the eggs, milk, salt, pepper and mustard.
Pour over the bread, making sure all of the top layer is moistened.
Sprinkle with paprika.
Cover with foil, refrigerate until 1 1/2 hours before needed.
Preheat oven to 350Β°.
Bake 50 to 60 minutes, removing foil after about 30 minutes.
It will puff up nicely and get toasty brown.
Broil 1 to 2 minutes if appearance calls for it.
This recipe can be altered with different kinds of cheese, sausage and onions, Egg Beaters and skim milk, spinach and mushrooms.
