Prepare charcoal grill at least 1 hour before you begin cooking mullets.

Split, but do not scale, enough medium to large size mullets for number of people you wish to feed.

Remove gut and head.

Rinse well and drain; pat dry.

Lay fish out on waxed paper on counter or table.

Salt, medium to heavy, on both sides of fish.

You may wish to use paper towels under fish to help absorb moisture.

Turn fish over after 2 hours; let set 2 hours more.

Turn fish over again; let set 2 hours more.
