Broccoli Egg Puff

Broccoli Egg Puff is an moderately easy dinner. Made with 1 lb. broccoli, 2 tbsp. flour, 1/2 tsp. baking powder, 5 eggs, beaten and 1 c. cottage cheese (small curd), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Cut off broccoli buds.

Set aside.

Chop remaining stalk. Cook, uncovered, in small amount of boiling salted water for 5 minutes.

Add reserved buds; cook 5 minutes.

Drain.

Set aside. In small mixing bowl, beat eggs.

With a wire whisk or rotary beater, beat in flour mixture.

Stir in cottage cheese and bacon. Evenly spread broccoli in bottom of a greased 10 x 6 x 2-inch baking dish. Pour egg mixture evenly over broccoli.

Bake, uncovered, at 350Β° for 20 minutes.

Sprinkle with Cheddar or Swiss cheese.

Bake 3 minutes more or until center is almost set and cheese is melted.

Let stand 5 minutes before serving.

Yields 6 servings.
