Broccoli Cornbread
Broccoli Cornbread is an easy dinner. Made with 1 1/4 sticks margarine, 4 eggs, 2 boxes jiffy cornbread mix, 1 (12 oz.) container cottage cheese and 1 (10 oz.) box frozen broccoli, thawed, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Preheat oven to 450°.
Place margarine in 9 x 13-inch aluminum pan; let melt in oven.
Put cornbread mix, eggs, cottage cheese and broccoli in bowl; mix well.
After margarine is melted take pan out of oven; pour margarine into cornbread mixture; mix well. Leave a little margarine in bread pan, just enough so the bread won't stick (not enough so you see any standing in pan).
Cook at 450° for 45 minutes or until golden brown.
Serve hot or cold.
