Broccoli Chowder is an moderately easy dinner. Made with 2 lb. fresh broccoli, 3 c. chicken broth, 3 c. milk, 1 c. cooked, chopped ham and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash broccoli and remove any leaves on coarse stems.

Put broccoli in kettle and add half the stock or broth.

Bring to boil, reduce heat and cover.

Simmer for 7 minutes or until tender.

Remove broccoli from stock with slotted spoon and chop coarsely.

Add remaining stock, milk, ham, salt and pepper to the stock in kettle and stir well.

Bring to boil over medium heat, stirring occasionally.

Stir in cream, cheese, butter and broccoli and heat until cheese is melted.

Do not boil.

Makes 8 servings.
