Brack (Irish Fruit Bread)
Brack (Irish Fruit Bread) is an easy dinner. Made with 1 lb. mixed dried fruit, 1 c. brown sugar, packed, 1 egg and 2 c. self-rising flour, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Overnight
Soak the fruit and sugar in 1 cup cold strong tea. The next morning add the flour and the well beaten egg.
Mix well.
Pour into a well-greased, foil lined loaf pan.
(It will look awful, but don't give up!)
Bake for 2 hours on middle shelf at 300Β°.
Take out of oven and leave in the pan until next day. Slice and serve with butter.
Keeps well wrapped in foil.
Can be frozen.
