Bourbon Balls
Bourbon Balls is an moderately easy dinner. Made with 8 each (1 oz.) sq. semi-sweet chocolate, 60 each vanilla wafer cookies, pulverized into crumbs, 1 c. pecans, finely chopped, 1 2/3 c. sugar and 1/2 c. bourbon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In a small heavy saucepan, melt the chopped chocolate over low heat, stirring almost constantly to prevent the bottom from scorching.
Remove the pan from the heat and let the chocolate cool to lukewarm.
Combine the vanilla wafer crumbs, pecans and 2/3 cup of sugar in a deep bowl.
Pour in the chocolate, bourbon and corn syrup.
Stir vigorously with a wooden spoon until the ingredients are well combined.
Shape mixture into balls about 1-inch in diameter.
Roll the balls in the remaining sugar and place them in a wide mouthed 1-quart jar with a secure lid.
