Borscht
Borscht is an moderately easy dinner. Made with 3 medium sized beets (organic), 2 small carrots (organic), 1 c. chopped red cabbage, 1 medium size onion and 2 tbsp. miso or soup base, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Chop beets, carrots and onion.
Cover with water in a saucepan and bring to a simmer.
Cook over medium heat for 15 minutes.
Add cabbage, miso and apple cider vinegar.
Cook for 10 more minutes. Add tamari or salt to taste.
Serve hot in bowls with a dollop of sour cream on top.
