Bombay Turkey
Bombay Turkey is an moderately easy dinner. Made with 4 tbsp. butter or margarine, 2 to 3 tsp. curry powder, 1/2 c. chopped onion, 3 tbsp. all-purpose flour and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In medium skillet, melt butter.
Add curry and heat 2 to 3 minutes.
Stir in onion and cook until tender but not brown. Blend in flour, salt and pepper, stirring well.
Add chicken broth all at once.
Cook and stir until boiling; cook 2 minutes longer. Add cooked turkey and shredded lemon peel.
Heat mixture to boiling.
Cook rice according to package directions.
Stir in cashew nuts and pimiento.
Serve mixture over rice.
Makes 4 to 6 servings.
