Blueberry Cake
Blueberry Cake is an moderately easy dinner. Made with 1 tsp. baking powder, 1 1/2 c. flour, 1/2 tsp. salt, 2 eggs, separated and 1/2 c. shortening, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Sift together baking powder, flour and salt.
Beat 2 egg whites until mounds form.
Set aside.
Cream shortening and sugar. Add 2 egg yolks.
Add dry ingredients to creamed mixture alternately with 1/3 cup milk.
Fold in egg whites; add 1 teaspoon vanilla.
Add blueberries.
Bake in greased small tube pan at 350Β° for 35 to 45 minutes.
Sprinkle top with granulated sugar.
This cake is light and moist.
