Blueberry Cake
Blueberry Cake is an moderately easy dinner. Made with 1 c. shortening, 1 1/2 c. sugar, 2 tsp. vanilla, 4 eggs, separated and 3 c. flour, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Cream together shortening and 1 1/2 cups sugar.
Add vanilla and egg yolks.
Beat until light and fluffy.
Sift together 3 cups flour, baking powder and salt.
Add alternately to creamed mixture with milk.
Beat egg whites until stiff.
Gradually add 1/2 cup sugar.
Fold into batter.
Add blueberries mixed with 1 tablespoon flour.
Pour into greased 13 x 9 x 2-inch pan.
Bake at 350Β° for 50 minutes.
When cool, sprinkle with confectioners sugar.
