Wash and discard any unwanted beans.

Soak beans in water overnight.

Using medium heat, cook the beans in the same water until the beans are tender.

Saute the onion and garlic in oil and add the chili peppers and oregano.

3 minutes over medium heat.

Add this mixture to the beans.

Leave enough water remaining for the sauce.

(You may need to add more.)

At this time add the salt, vinegar, sugar and bay leaves.

Cover the pot, leaving an escape for the steam.

Cook about 15 to 20 minutes or until the sauce thickens to your taste.
