Black Bean Dip
Black Bean Dip is an moderately easy dinner. Made with 1 c. dried black beans, soaked overnight, drained and cooked in 4 c. water about 1 1/2 hours or until tender, drained or 1 (16 oz.) can black beans, drained and rinsed, 2 tbsp. chopped red onion, 2 tbsp. balsamic vinegar, 1 tbsp. fresh orange juice and 1 medium clove garlic, crushed, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
In blender or food processor, combine beans, 1 tablespoon chopped onion, vinegar, orange juice and garlic.
Blend until smooth.
Season with salt and pepper.
Sprinkle remaining onion on top.
Serve with assorted fresh raw vegetables or pita bread, cut into triangles and toasted in a 325Β° oven until crispy.
