Bill's Chicken Salad
Bill'S Chicken Salad is an impressive salad you can prepare in just 54 minutes. Made with frying chicken (about 2 1/2 to 3 lb.), c. sweet pickle relish, c. miracle whip or mayonnaise, large eggs, hard-boiled and chopped and c. fresh onion, minced or finely chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Boil the chicken until completely tender (about an hour). Reserve about 1/4 cup of the broth.
Remove the chicken from the pot and allow to cool completely, then skin, bone, and dice or chop very small.
Mix ingredients well in a bowl that can be sealed airtight.
Seal and refrigerate at least four hours for flavors to blend.
