Bill's Chicken Salad
Bill'S Chicken Salad is an moderately easy dinner. Made with 1 frying chicken (about 2 1/2 to 3 lb.), 1 c. sweet pickle relish, 1 1/2 c. miracle whip or mayonnaise, 2 large eggs, hard-boiled and chopped and 1/2 c. fresh onion, minced or finely chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Boil the chicken until completely tender (about an hour). Reserve about 1/4 cup of the broth.
Remove the chicken from the pot and allow to cool completely, then skin, bone, and dice or chop very small.
Mix ingredients well in a bowl that can be sealed airtight.
Seal and refrigerate at least four hours for flavors to blend.
