Beet Salad is an easy dinner. Made with 1 can diced beets, 1 (3 oz.) pkg. lemon jello, 1/4 c. sugar, 1/4 c. vinegar and 1 tsp. horseradish, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Drain beets in 2-cup measuring cup and add vinegar and sugar and enough water to make 2 cups.
Add jello and horseradish.
Place in mold in refrigerator.
Serves 6 to 8.
