Beet Salad
Beet Salad is an moderately easy dinner. Made with 1 can diced beets or fresh (if you like), 1 pkg. lemon jell-o, 1/2 c. orange juice, 2 tsp. horseradish and 2 tsp. vinegar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Drain juice from beets; measure 1 cup juice in pan and heat. (Add water if juice does not measure 1 cup.) Dissolve gelatin in hot beet juice and add remaining ingredients, except celery and beets.
Stir in celery and beets when mixture is slightly thickened.
Chill until firm and unmold.
If made in square pan, cut into squares.
