Beet Relish
Beet Relish is an moderately easy dinner. Made with 4 lb. beets, cooked and peeled, 4 large onions, 3 large green peppers, 1 tbsp. whole cloves and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Grind the beets, onions and green peppers.
Tie the cloves in a cheesecloth bag.
In a large kettle, combine the vegetables, clove bag, sugar, vinegar, 1/2 cup water and 1 tablespoon salt. Bring to a boil and then reduce heat.
Cover; simmer 20 minutes, stirring occasionally.
Remove clove bag.
Ladle into hot jars and adjust lids.
Put in boiling water bath for 15 minutes.
