Beet Preserves
Beet Preserves is an easy dinner. Made with 2 lb. beets, 3 c. sugar, 1 tbsp. ground ginger, 3 small lemons, very finely chopped and 1 c. finely chopped almonds, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook whole beets until tender, in boiling water for about 30 minutes.
Let cool; peel and dice.
Combine diced beets, sugar and ginger in medium saucepan and cook over medium-low heat for 30 minutes.
Add chopped lemon and continue cooking until slightly thickened, stirring occasionally to prevent sticking, about 30 minutes.
Stir in almonds.
Transfer to jars with tight-fitting lids and seal.
