Beet Pickles
Beet Pickles is an moderately easy dinner. Made with 2 c. water, 2 1/2 c. sugar, 1 c. white vinegar, whole cloves and stick cinnamon, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Heat this mixture very hot.
Wash fresh, cleaned beets with peel on and cut tops off, leaving about 1 1/2-inch tops on.
Cook with water until tender, but not too done.
Cool and peel beets, placing them into a clean bowl.
Place them into liquid and heat. Add 3 or 4 whole cloves into hot, clean jars and 1 stick cinnamon, also.
Seal with new jar lids.
Makes approximately 2 quarts and 1 pint.
