Beet Pickles is an easy dinner. Made with 2 c. sugar, 1 1/2 tsp. salt, 3 1/2 c. vinegar, 1 1/2 c. water and dutch oven full of beets, cooked and sliced or whole, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil first 4 ingredients and pour over beets that have been put in jars.
Process 30 minutes in water bath.
Yields 7 pints.
