Beet Pickles
Beet Pickles is an easy dinner. Made with 10 c. sugar, 7 c. vinegar, beets and red food color (optional), this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Wash beets.
Cover with water and bring to boil.
Cook until tender and take the skin off.
Pack into jars.
Leave small beets whole and quarter large ones.
Bring sugar and vinegar to a boil and cook until sugar dissolves.
Add food coloring, if desired. Pour over beets and seal.
