Beet Pickles
Beet Pickles is an moderately easy dinner. Made with 2 c. water, 2 1/2 c. sugar, 1 c. white vinegar, whole cloves and stick cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Heat this mixture very hot.
Wash fresh, cleaned beets with peel on and cut tops off, leaving about 1 1/2-inch tops on.
Cook with water until tender, but not too done.
Cool and peel beets, placing them into a clean bowl.
Place them into liquid and heat. Add 3 or 4 whole cloves into hot, clean jars and 1 stick cinnamon, also.
Seal with new jar lids.
Makes approximately 2 quarts and 1 pint.
