Peel and devein the shrimp.

Put the flour in a mixing bowl; add salt, pepper, nutmeg and coriander.

Gradually add the beer, stirring with a wire whisk until smooth.

Add more beer if necessary (should be consistency of pancake batter).

Brush the top of the batter with 1 tablespoon oil (this prevents gas from escaping).

Cover with plastic wrap and let stand in a warm place for 30 minutes.

Beat the egg whites until they form soft peaks and fold them into the batter with a rubber spatula.

Heat the oil in an electric skillet or deep fryer to 350Β°.
