Beef Stroganoff
Beef Stroganoff is an moderately easy dinner. Made with 1 1/2 lb. lean steak, 1/2 tsp. salt, 1/4 tsp. pepper, 2 tbsp. diet margarine and 1 large can sliced mushrooms, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Cut steak into 1/2-inch strips.
Remove any fat.
Pat dry with paper towel.
Sprinkle with salt and pepper.
Melt 1 tablespoon margarine in frying pan.
Add meat; cook and stir until brown. Remove meat from pan; set aside.
Cook onion and mushrooms in same pan until tender.
Return meat to pan.
Mix the broth, mustard and catsup; pour over meat.
Cover; simmer for 1/2 hour.
Make paste of flour and water; stir into pan.
Cook, stirring constantly, until thick.
Add yogurt or sour cream; do not boil.
Serve over cooked noodles.
