Beef Stew
Beef Stew is an easy dinner. Made with 1 lb. lean boneless beef, 8 medium potatoes, 2 carrots, 3 onions and 3 c. tomato juice, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook beef in enough water to cover same until meat is tender. Peel and cut up potatoes, carrots and onions.
Add vegetables to beef and if needed, add more water.
Cook until vegetables are tender.
Add tomato juice and bring to a boil.
Salt and pepper to taste.
Simmer for about 20 minutes to blend tomato juice with other ingredients.
Serves about 6.
