Beef Rice Casserole
Beef Rice Casserole is an moderately easy dinner. Made with 1 c. uncooked rice, 1 lb. ground beef, 1 c. ripe olives, 1/2 c. chopped onions and 1/4 c. chopped ground pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut olives into large pieces.
Brown beef in oil; remove meat and drain.
To oil, add celery, onions, ground pepper and rice. Cook, stirring with fork, until browned.
Add tomatoes, water, seasonings, meat and olives; bring to a boil.
Pour into a 2-quart casserole dish and cover.
Bake at 325Β° for 45 minutes to 1 hour. Serves 6 to 8.
