Beef-Filled Squash
Beef-Filled Squash is an moderately easy dinner. Made with 2 medium-large acorn squash, 2 slices bacon, diced, 1 lb. ground beef, 1/4 c. chopped onion and 1 to 2 tbsp. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cut squash in half lengthwise; remove seeds.
Bake, cut side down, in shallow pan at 350° for 45 minutes or until tender.
Fry diced bacon.
Add beef, onion, 1/2 teaspoon salt and dash of pepper.
Cook until beef is browned.
Pour off excess fat.
Remove squash from shells (reserve shells).
In small mixing bowl, whip squash with 1/2 teaspoon salt; add milk as needed to make mixture fluffy.
Combine with beef mixture.
Return to squash shells.
Top with crushed potato chips.
Continue baking at 350° for 15 minutes.
Makes 4 servings.
