Beef Enchiladas is an moderately easy dinner. Made with 12 tortillas (corn or flour), 3 tbsp. oil, 2 medium onions, chopped, 1/2 lb. grated longhorn cheese and 2 (10 oz.) cans enchilada sauce, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Dip tortillas, one at a time, into hot oil to soften and drain on paper towel.

Sprinkle beef, onion, cheese and pepper on tortilla and roll up.

Place, overlapped side down, in shallow baking dish and cover with enchilada sauce.

Top with grated cheese and bake at 350Β° until cheese is melted.

A can of nacho cheese soup poured along with the enchilada sauce on top of these enchiladas is good.

Just mix soup and sauce thoroughly and pour over top and heat thoroughly.
