Bean Taco
Bean Taco is an impressive dinner. Made with 2 cans refried beans, 1 c. cheddar cheese, grated, 1/2 c. minced onion, 1 tbsp. chili powder and 1 tsp. ground cumin, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Heat bacon grease in heavy skillet; add onions, brown and then add the beans and mix well.
Cook over low heat for a few minutes. Add all other ingredients, except Cheddar cheese; mix thoroughly and simmer.
Gradually add Cheddar cheese.
Cook until cheese is melted and blended well with the beans.
Correct seasoning as needed.
Serve in crisp taco shells as with other tacos, but do not use taco sauce.
