Bean Soup
Bean Soup is an moderately easy dinner. Made with 2 c. beans, mixed, 2 tbsp. salt, 1 ham hock, 28 oz. can tomatoes and 2 medium onions, quartered, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and drain beans; cover with water.
Add salt; soak overnight.
In morning drain beans and add 2 quarts water and ham hock with ham shreds.
Bring to a boil.
Cover and simmer 3 hours. Cut ham off bone; return meat to pot.
Add remaining ingredients and simmer 30 minutes more.
