Bean Soup
Bean Soup is an moderately easy dinner. Made with 1 1/2 c. bean soup mix, 2 qt. water, hot sausage or diced ham, 1 large onion, chopped and 1 clove garlic, minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Wash beans, cover with water, adding 1 tablespoon salt, and soak for at least 3 hours or overnight.
Put beans in 2 quarts of water and let boil slowly for 1 1/2 to 2 hours.
Add precooked sausage or ham.
Cook for 1 1/2 to 2 hours.
Add remaining ingredients and cook for 30 minutes more.
Serve in a bowl over rice.
