*Bean Soup
*Bean Soup is an impressive soup you can prepare in about 1 hour 10 minutes. Made with . great northern beans (preferably goya), c. water, . baking soda, . paprika and onions, finely chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cover beans with water and baking soda overnight.
Drain. Place beans in pot with water. Add paprika, onions, carrots and celery. Bring to a boil.
Add 1/4 cup oil.
Let it boil for 5 minutes.
Cover and simmer for 2 hours or until tender. Add tomato sauce and stir.
When beans are tender (not mushy), add salt, pepper and parsley. Tastes better the second day.
