Cover potato cubes with water.

Let stand while preparing sauce.

Melt butter or margarine in large pan.

Add onion, garlic, celery and carrots; saute until vegetables are limp.

Drain potatoes and add to vegetables.

Mix thoroughly.

Dissolve bouillon cubes in the boiling water.

Add to potatoes along with salt.

Cover, lower heat and simmer slowly until potatoes are tender, about 30 minutes.

Pour into tureen and sprinkle with parsley.
