Basil Vegetables
Basil Vegetables is an moderately easy dinner. Made with 1/4 c. chopped onion (1 small), 2 large cloves garlic, finely chopped, 1 tbsp. olive or vegetable oil, 2 c. chopped seeded tomatoes (2 medium) and 1 1/2 c. thinly sliced zucchini (1 1/2 small), this recipe delivers authentic, satisfying flavors. Cook and stir onion and garlic in oil in 10-inch nonstick skillet over medium-high heat until onion is tender, about 2 minutes.
Stir in tomatoes, zucchini and basil.
Heat to boiling; reduce heat.
Simmer uncovered until zucchini is crisp and tender, about 3 minutes longer.
Stir in cheese.
