Basic Spaghetti Sauce is an moderately easy dinner. Made with 1 very large onion, 3/4 c. olive oil, 4 (12 oz.) cans tomato paste, 3 tsp. sugar and 4 cloves garlic, crushed in pan while using, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In large 8-quart or large pot, cook onion (leave sliced long to remove easily) and garlic in oil.

Remove onion and garlic with slotted spoon.

Drain any liquid back into pan.

Onion should be cooked slowly until they begin to brown; do not burn.

Remove pot from heat.

Put in tomato paste; return to heat and cook slowly, stirring often.

Cook about 5 minutes.

Do not let stick (best to use Teflon pot).

Add tomato sauce, sugar and salt.

Simmer at least 3 hours.

Can add seafood, meat or fowl to this basic sauce. Can freeze.

Makes 7 to 8 quarts.
