Basic Brown Soup Stock
Basic Brown Soup Stock is an easy dinner. Made with bare bones (not meaty soup bones, ask butcher for fresh rendering bones), yellow onions, carrots and chopped celery, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Place bare bones in a roasting pan, and roast at 425Β°, without lid, for 2 hours.
Place the roasted bones in a large soup pot. Add unpeeled vegetables: chopped celery, yellow onions and carrots.
(Yellow onion skins give color to stock.)
Bring to heavy simmer and cook for 8 hours.
Strain stock and store.
