Basgne Fish Soup
Basgne Fish Soup is an moderately easy dinner. Made with 1 c. chopped onion, 1/2 c. chopped celery, 2 cloves garlic, crushed, 2 tbsp. butter or margarine and 2 (16 oz.) cans italian tomatoes, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In large saucepan or pot, saute onion, celery and garlic in butter or margarine.
Cut up tomatoes and add to pan with wine, parsley, salt, pepper and thyme.
Cover and simmer 30 minutes. Add fish and simmer 7 to 10 minutes or until fish flakes easily with a fork.
Sprinkle with extra parsley and serve with green salad and crusty bread.
Makes 4 to 6 servings.
