Balsamic Turkey
Balsamic Turkey is an moderately easy dinner. Made with 2 tbsp. flour, 1/8 tsp. black pepper, 4 turkey breasts cutlets (about 1 lb. each, about 1/4-inch thick), 3 tbsp. olive oil and 2 large red peppers, cored, seeded and sliced into 1-inch rings, this recipe delivers authentic, satisfying flavors. Combine flour and pepper; coat turkey cutlets with flour. Shake off excess.
In heavy skillet, heat 2 tablespoons olive oil. Add turkey and brown on each side.
Remove to warm platter.
Add remaining oil along with peppers and garlic.
Reduce heat to low and cook until tender.
Add basil and vinegar; return turkey to skillet.
Raise heat to moderate and cook 2 minutes longer until turkey is done.
