Baked Rice Pudding
Baked Rice Pudding is an moderately easy dessert you can prepare in about 1 hour 20 minutes. Made with c. rice (regular), . salt, c. sugar, . nutmeg and c. raisins, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Put rice, raisins and salt in saucepan; cover with water. Cook until rice is tender and raisins are plump, stirring often. Add more water if needed.
Mix the eggs, sugar, vanilla, nutmeg and milk together; blend well.
Add to the rice mixture.
Mixture must be rather on the thick, soupy side, as it will thicken while it is baking and still more after it is removed.
Pour into a greased baking dish.
Bake at 350° to 375° for about 20 minutes, until it starts to bubble around the edges.
The center will be very soft yet.
Remove from oven; let set.
