Baked Fish
Baked Fish is an easy dinner. Made with 2 lb. fish fillets, olive oil, 8 oz. fresh mushrooms, sliced, 1 (14 oz.) can artichoke hearts, drained and halved and eggplant-tomato sauce, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Place fish in 13 x 9-inch baking dish.
Brush with a little oil.
Sprinkle with salt, pepper and paprika.
Bake, uncovered, in 400Β° oven for 15 minutes.
Add mushrooms and artichokes; spoon Eggplant-Tomato Sauce over all.
Cover; return to oven and bake 20 minutes.
Uncover, bake 5 minutes more.
Serve with hot cooked rice, if desired.
