Bacardi Daiquiri
Bacardi Daiquiri is an moderately easy dinner. Made with 1 (4 serving size) pkg. jell-o brand lemon flavor pudding and pie filling, 1 (3 oz.) pkg. jell-o lime flavor gelatin, 1/3 c. sugar, 2 1/2 c. water and 2 eggs, slightly beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Mix pudding mix with gelatin and sugar in a saucepan.
Blend in 1/2 cup of the water and the eggs.
Add remaining water and cook and stir over medium heat until mixture comes to a full boil. Remove from heat; stir in rum.
Chill.
Fold in whipped topping. Spoon into pie crust and chill firm, about 2 hours.
Garnish with additional whipped topping and lime slices.
Very good.
