Avocado Pasta Salad
Avocado Pasta Salad is an moderately easy dinner. Made with 1/2 lb. rotini pasta, 1/2 c. diced provolone cheese, 1 can pitted black olives, 4 c. assorted vegetables and salt and pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
In a large bowl, gently toss pasta with dressing.
Add cheese, Prosciutto, black olives, onion, peas, broccoli, carrots, bell pepper, mushrooms, asparagus tips and sliced basil.
Toss gently. Season to taste.
Fan avocado slices on top.
Garnish with fresh basil leaves and tomato.
Serves 4.
