Arroz Con Pollo
Arroz Con Pollo is an moderately easy dinner. Made with 2 1/2 lb. chicken, cut up, 1/4 lb. ham or bacon, cut up, 1 c. rice, 1 onion and 1 bay leaf, crumbled, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Brown floured and salted chicken in olive oil.
Set aside in warm place.
Add ham, onion, scallions and saute for few minutes. Add rice and spices.
Blend for few minutes and add chicken broth; salt to taste.
Cook on stove for about 10 minutes.
Place rice mixture and chicken in casserole and cook in 350Β° oven for 30 minutes or until rice is tender.
