Armadillo Eggs
Armadillo Eggs is an moderately easy dinner. Made with 1/2 lb. grated monterey jack cheese, 16 small pieces cheese, 1/2 lb. pork sausage, 1 1/2 c. bisquick mix and 1 box shake 'n bake for pork, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix grated cheese and sausage.
Add Bisquick mix, a little at a time, until cheese and sausage mix.
Knead until blended.
Set aside.
Stuff peppers with cheese.
Take small amount of mixture and pat like pancake and wrap pepper.
Dip in egg and then roll in Shake 'n Bake.
Bake in oven at 325° for 20 to 25 minutes.
