Armadillo Eggs
Armadillo Eggs is an moderately easy dinner. Made with 1 1/2 c. bisquick, 1/2 lb. bulk sausage, 1 (26 oz.) can whole jalapeños, seeded and deveined, 2 eggs, beaten and 2 (6 oz.) grated monterey jack cheese, divided, this recipe delivers authentic, satisfying flavors. Mix half the cheese with baking mix and sausage.
Stuff peppers with remaining cheese.
Pinch together lightly.
Roll dough 1/8-inch thick. Wrap each jalapeño in dough.
Remove excess dough and seal completely.
Shape each like an egg.
Roll each one in seasoned mix, dip in beaten egg and roll in seasoned mix again. Arrange on a baking sheet and bake at 325° for 20 to 25 minutes. Can be made ahead and reheated.
