Armadillo Eggs
Armadillo Eggs is an easy dinner. Made with 12 jalapeño peppers, 1 lb. jimmy dean hot sausage, 1 box original shake 'n bake and enough sharp cheddar cheese to choke a small goat (1 c.), this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Wash jalapeño peppers and cut the ends off of the peppers. Take the seeds out of the peppers and stuff the cheese inside the peppers.
Take peppers and roll sausage around the peppers to make a small ball.
Roll the small ball in the Shake 'n Bake to cover. Bake at 375° until the sausage is done.
Make sure that you spray the cookie sheet with Pam before you place balls on it so you can cut down on the fat.
