Armadillo Eggs
Armadillo Eggs is an moderately easy dinner. Made with 24 jalapeño peppers, 1 lb. lean sausage, 8 oz. cheddar or monterey jack cheese, grated, 1 1/2 c. bisquick and 2 eggs, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Hollow out jalapeño peppers.
Stuff with cheese.
Mix together Bisquick, sausage and leftover cheese.
Roll around each pepper. Mix eggs.
Roll armadillo egg in egg, then roll in pork Oven Fry. Bake at 325° on cookie sheet until brown for 35 minutes.
