Armadillo Eggs
Armadillo Eggs is an moderately easy dinner. Made with 16 oz. cheddar cheese, 8 oz. monterey jack, 16 oz. regular owens country sausage, 3/4 to 1 c. bisquick and 1 can whole jalapeños, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Clean seeds out of jalapeños.
Cube 6 ounces Cheddar and 8 ounces Monterey Jack and put 1 cup of each into clean jalapeño. Mix 10 ounces grated cheese, sausage and Bisquick into a ball. Make golf ball sized and flatten.
Wrap around peppers.
Coat with beaten egg; roll in Shake 'n Bake.
Bake at 350° for 15 to 18 minutes.
